Kiki turns 23!

So my baby sister is now 23. Happy Birthday Kiki! My sister and I were big fans of Philadelphia Foodie on Instagram but I had to un-follow them when I started my Real Foods Challenge because their photos made me want to eat everything. Kiki found a cake on there forever ago and said she wanted it for her Birthday. I was going to purchase it for her but then looked at the price of the cake plus shipping and handling and thought hmmm maybe I can make this. Momofuku Milk Bar has been kind enough to post many of their amazing recipes on their website. There are also many copy cat sites online and I once I found a recipe for their Cornflake Chocolate Chip Marshmallow Cookies. The Cornflake Chocolate Chip Marshmallow Cookies were actually the last thing I baked in 2014. When I knew I was started the real food challenge I wanted to go out with a bang and the cookies were absolutely amazing. Now mind you I have never tried anything from Momofuku's yet but I plan to in the not to distant future. Ok so to prepare for this cake I printed out the 4 page recipe. Which includes how to make the cake, the frosting, and the birthday cake crumb. I have been following another food blogger Deliciously Sprinkled and her sprinkles are always so pretty and have no Brown in them. She told me she orders all of her sprinkles from nuts.com so I followed her lead and I am so happy I did. This cake really deserves the best sprinkles in town. The first thing I made was the glorious cake crumb. It was so yummy all on its own and would be great sprinkled on top of ice cream.

Next up I did the cake which was pretty much funfetti cake made from scratch rather than a box. The cake is prepared in a sheet pan and then cut using a cake ring. If you are thinkng of making this cake give yourself plenty of time to order a cake ring online because you can not find a cake ring in any stores trust me I searched high and low. Also another thing you will need to special order are the acetate cake collars. I dropped the ball on ordering them. If I bought them when I got the cake ring they still wouldn't have got here in time. Thankfully I was clever enough to ask the bakery at Giant if I could purchase two off of them. They didn't know what to charge me so they decided on .50 cents! I was thrilled. The bottom layer of the cake is the scraps left over after you cut out the two top tiers.

What to Pack for a Ragnar Trail Relay?

Months ago when we decided to sign up for the Ragnar Trail Relay in West Virginia I started a list on my phone of what I wanted to pack. I have been known for being a list maker. Thankfully I am not alone in my list making when more than half of my team has an Engineering background it turns out we are all pretty listy. Our one team member even set up a google doc of what to pack so that we can all edit it. I know I'm a nerd but I love being prepared and I love being organized.

I started packing over the weekend when I knew I wouldn't be wearing most of my running clothes until race day. For the Relay I will be running 3 times so I made sure to pack three complete running outfits. I found a really helpful tip online to place each outfit in a gallon ziplock bag so I wont have to be searching for everything in the middle of the night or while someone else may be sleeping. The event will be all day and all night so I needed to make sure I packed a headlamp and extra batteries. I …

Healthy Body = Healthy Mind

I have been an a quest for Health & Wellness for many years now. I started thinking more about my health as I was getting closer to my 30s. I had been clean off drugs and alcohol for many years which was a huge plus, but I knew there was more that needed to be done. I quit smoking before my 28th birthday. That single action made me realize how much more I wanted to do for myself. Soon after I quit smoking, I started walking then I started running. Running was not always my passion it was very tough at first and I will admit that I did not love it right away. It took me some time to build a strong pace that I felt comfortable breathing with. I also did yoga on and off for many years and always loved that practice. When my girlfriend did her 200 Hour Yoga teacher training my practice got more intense and I was peaceful. That same friend and yoga mentor moved to Spain and my practice suffered I just did not keep up with it while she was away but I got more into running during that ti…

No Lunch Run for Me

Yesterday I was unable to run during my lunch break. My first reaction was self pity but then I quickly had to realize my little girl and her health are far more important. My daughter has been sick on and off for a few weeks and her breathing was very labored and I knew she had to go back to the doctor. Thankfully I was able to get her an appointment that day but it meant leaving work for a few hours and missing my lunch hour. When I start a training plan I tend to get a little obsessive about sticking to as much as I can. I don't know when I became such a rule follower. I have a good friend that I get to work with each day and he came to my rescue yesterday and put me in my place and out of my pity party. Thank you. I need to remember that things are going to change and everything can not always go as planned. When I have acceptance my life is far more serene. So at the end of the day yesterday I did not get to run or even do an alternate workout like I had planned because my hu…
