Kiki turns 23!

So my baby sister is now 23. Happy Birthday Kiki! My sister and I were big fans of Philadelphia Foodie on Instagram but I had to un-follow them when I started my Real Foods Challenge because their photos made me want to eat everything. Kiki found a cake on there forever ago and said she wanted it for her Birthday. I was going to purchase it for her but then looked at the price of the cake plus shipping and handling and thought hmmm maybe I can make this. Momofuku Milk Bar has been kind enough to post many of their amazing recipes on their website. There are also many copy cat sites online and I once I found a recipe for their Cornflake Chocolate Chip Marshmallow Cookies. The Cornflake Chocolate Chip Marshmallow Cookies were actually the last thing I baked in 2014. When I knew I was started the real food challenge I wanted to go out with a bang and the cookies were absolutely amazing. Now mind you I have never tried anything from Momofuku's yet but I plan to in the not to distant future. Ok so to prepare for this cake I printed out the 4 page recipe. Which includes how to make the cake, the frosting, and the birthday cake crumb. I have been following another food blogger Deliciously Sprinkled and her sprinkles are always so pretty and have no Brown in them. She told me she orders all of her sprinkles from so I followed her lead and I am so happy I did. This cake really deserves the best sprinkles in town. The first thing I made was the glorious cake crumb. It was so yummy all on its own and would be great sprinkled on top of ice cream.

Next up I did the cake which was pretty much funfetti cake made from scratch rather than a box. The cake is prepared in a sheet pan and then cut using a cake ring. If you are thinkng of making this cake give yourself plenty of time to order a cake ring online because you can not find a cake ring in any stores trust me I searched high and low. Also another thing you will need to special order are the acetate cake collars. I dropped the ball on ordering them. If I bought them when I got the cake ring they still wouldn't have got here in time. Thankfully I was clever enough to ask the bakery at Giant if I could purchase two off of them. They didn't know what to charge me so they decided on .50 cents! I was thrilled. The bottom layer of the cake is the scraps left over after you cut out the two top tiers.

No Lunch Run for Me

Yesterday I was unable to run during my lunch break. My first reaction was self pity but then I quickly had to realize my little girl and her health are far more important. My daughter has been sick on and off for a few weeks and her breathing was very labored and I knew she had to go back to the doctor. Thankfully I was able to get her an appointment that day but it meant leaving work for a few hours and missing my lunch hour. When I start a training plan I tend to get a little obsessive about sticking to as much as I can. I don't know when I became such a rule follower. I have a good friend that I get to work with each day and he came to my rescue yesterday and put me in my place and out of my pity party. Thank you. I need to remember that things are going to change and everything can not always go as planned. When I have acceptance my life is far more serene. Real Food Real Fuel

On January 1st of this year I started a resolution to eat more real foods. This idea was sparked by real food bloggers like Lisa Leake and Trina Holden. These woman have inspired me greatly to not only eat more real foods but to cook and bake with more real foods. To start out my pledge I cut out all white flour and white sugar from my diet for 45 days. I started to bake my own bread because I could not find actual whole grain bread for sale. Have you ever read the ingredients of your whole wheat bread? It isn't really what it's cracked up to be. So many things in my kitchen had to go: ketchup, salad dressing, vegetable oil, Hershey's Chocolate Syrup, Philadelphia Cream Cheese, Cool whip and the list goes on and on. I really had little to know knowledge about reading ingredients for years I was more concerned with calories and nutritional info which can be important info. but now to me the most important info is the ingredients.
