I have been sort of obsessed with granola recently. I love eating eat it with plain oatmeal and fresh berries. I'm not really a huge fan of yogurt so when I cover it with toppings its easier to tolerate. Yogurt is really great for digestion and a good source of protein which is why I try to keep it in my diet. Yesterday was my first day getting back to my clean eating routine after having off for one week. I started to feel headaches on Sunday and I'm certain it was from all of the sugar I consumed in the days before. It took me months to get used to eating the way that I have been eating but it only a few days for me to notice the side effects of coming off of my routine. I really do not think it will be a problem getting back on track.
Sunday I made a loaf of my Whole Wheat Banana Bread but added a 1/2 cup of walnuts this time. I know the Banana bread will not last long in our house. Last night I made a big batch of granola to snack on or to eat with yogurt. Everyone in the house loves the granola. Its absolutely adorable to hear my daughter say granola. I had a bread making fail on Sunday so there is not much whole wheat bread in the house which is a major bummer. I think when lost power last week our yeast must have went bad in the fridge causing the bread dough not to rise.
Someone asked me what I eat for breakfast the other day and the list was endless. For lunch on work days I typically eat a spinach salad with whatever random things I decide to throw on top. I do not use salad dressings because they typically contain vegetable oil so instead Ill use a bit of olive oil. Dinners are actually the most frustrating meal of the day for me. My husband and son eat meat so I cook them meat and then I usually eat whatever sides I prepare. I like to cook brown rice black rice or quinoa and a veggie as our sides. Once a week I will make a meat-free meal that everyone can enjoy. My daughter has not decided whether she wants to eat meat or not yet. I give it to her and most of the time she eats around it. I would be so happy if she decided not to eat meat. My son loves meat and I doubt that he will ever decide to give it up. My husband has many times toyed with the idea of giving up meat but still eating fish like I do. I do not eat fish often its more or less something I order when I go out to eat. I will cook salmon for dinner once every few months when I can find some fresh (not farmed) salmon on sale in the market.

Homemade Granola

Adapted from 100 days of Real Food
Ingredients:
3.5 cups of old fashioned oats
1 cup sliced almonds
1 cup of nuts (pecans or walnuts)
1/4 cup chia seeds
1/2 cup sunflower seeds
1/2 cup pumpkin seeds
2 teaspoons cinnamon
1 teaspoon ginger
1/2 teaspoon nutmeg
6 tablespoons or melted butter or coconut oil
1/2 cup honey
2 teaspoon of vanilla extract
1/2 teaspoon of salt
Directions:
Mix all dry ingredients in large bowl minus the salt.
Melt butter or coconut oil. Add honey. Mix until combined. Add salt and vanilla mix well.
Pour melted mixture over dry mixture.
Mix until evenly coated
Line Baking Sheet with unbleached parchment paper.
Spread mixture in pan.
Bake for 60-80 minutes at 250.
Let cool completely before breaking into chunks.
